I cant recommend these highly enough. They have all the cooking information you need plus useful information about equipment etc.
 
The Larousse Gastronomique - the encyclopedia of food, wine and cooking. This is a definitive book!
 
French Provincial Cooking by Elizabeth David. A great read and passionate discourse on food. Has inspired many chefs including Rick Stein. Great book!

Escoffier - The Complete Guide to the Art of Modern Cookery. Another huge book in everyway. Originally published in the early 20th century but in English in 1979. More detail you could not find.
