
My name is Paul Bellchambers. I have lived in Moulsford for over nine years with Carolyn and our two terriers, Rusty and Wellie. This year I decided to go into business working from my new kitchen. I worked in the computer industry for more years than I care to remember but cooking has been my hobby and passion.
In 2003 I enrolled in the City and Guilds Diploma in Professional Catering course at Thames Valley University. After two years of hard work, assessments and fun I passed in 2005.
I was lucky enough to experience the heat and excitement of the kitchens at Le Manoir Aux Quat'Saisons for a short period. This seeded the idea of TheLateChef. I have been working on TheLateChef concept for the last year or so. Buy local, cook local, eat local, is a great way to think about what I want to do. Create quality dishes from seasonal and local ingredients. I have chosen range from the traditional to the exotic. If you like Indian food, or a typical English dish or a rustic Italian meal then there will surely be something on the menu that will tempt you.
